Case Study: TuanTuan Chinese Brasserie

TuanTuan Chinese Brasserie is a new restaurant in Carlton that serves Hong Kong comfort food – like congee, pork buns, soups and curries – with a French twist.

They are best known for their Snow Buns – a soft golden bun, baked fresh on the hour, stuffed with your choice of BBQ pork, pineapple, salted egg custard or almond cream. The top is cracked and crispy, a little like a streusel.

In this project, HWD was tasked to design and construct the exhaust and filtration system. One of the challenges faced was having to find a way to make the exhaust compliant with the local authority’s requirements, as the filtered exhaust air discharges directly through the shop front.

The key requirement for this project was to get HWD to come in first to start on the ceiling ducting, which was critical to the rest of the renovation. In the end, everything worked out well and, most importantly, was completed on time and on budget.

We also supplied lots of custom stainless steel equipment, most of them for cooking and ware washing.
