One of our recent projects was with Kyodai Katsu in Carnegie. This used to be a butcher shop before it was changed to a contemporary Japanese restaurant specialising in gyoza. As with other specialised cuisine restaurants, our work here had to consider the unique requirements of the cuisine and dishes that would be the highlight of the menu.

A key requirement in this project from the client was to develop a compact and neat kitchen in the space, which would be open and easily visible to customers. As a result, we had to make use of the limited space to maximise functionality, without compromising on visual appeal. In addition, we were also working on a complete fit out, an open bar area, and a separate wash and prep area. Some of the equipment we used included an extraction kitchen system with a matching under counter refrigeration system, a cooking bank, custom stainless steel benching, sinks, and a self-ventilating dishwasher.

We installed the Stainless Steel Dual Mount Hob Pre Rinse Unit With 12” Pot Filler for this restaurant, which offers a dual hob tap body, including inlet hoses. Other features include ½ turn rising spindles, a 12” pot filler and a 3 star 8LPM self-closing variable spray trigger valve. We also used the Woodson W.FRS80 single pan 8L fryer in the kitchen. Manufactured from durable stainless steel, the fryer is built for quick and energy efficient operation, essential when cooking short runs of fried food. The fryer comprises a basket and a 200mm deep pan, and is suitable for use with soluble oil. With an 8L capacity and over temperature safety cut-out, the fryer ensures safe usage, in addition to being reliable and efficient.
