To reduce the chance of your restaurant spreading illnesses, it is important to keep your commercial kitchen clean. Here are some steps to keep in mind:
1. Practise good personal hygiene
Anyone who is in a position where they need to touch food should always properly wash their hands, both before and after handling food. They should also wear clean protective clothing, such as aprons, and long hair should be tied back or covered.
2. Throw out unused or expired food
Always check and double check the use-by dates on food products. Once it is past the use-by date, these foods should not be used or consumed, and should be thrown out to prevent contamination.
3. Store foods appropriately
To stop bacteria from growing and multiplying to dangerous levels, be sure to store foods appropriately. High-risk foods such as raw meat or dairy should be kept out of the temperature danger zone between 5 °C and 60 °C.
4. Protect against pests
Kitchens are a huge attraction for pests such as rodents and mice. Avoid having pests in your commercial kitchen by putting in place certain practices, including having regular professional pest inspections and proper waste disposal.
5. Wash and sanitise frequently
It is important to wash kitchen utensils, surfaces and equipment frequently to remove food, dirt and grease. However, washing alone is not enough. To kill bacteria, you need to also sanitise frequently, either with a chemical agent or with heat.
